TAMALE PIE
 

2 lb. ground beef
1 chopped onion

TAMALE MIX:

1 chopped bell pepper
1 tbsp. chile powder
3/4 tbsp. cumin
2 (1 lb.) cans tomatoes, chopped with their juices
1/2 tbsp. pepper
1 tsp. salt
1 c. black olives, sliced

CORNMEAL MUSH:

1 1/4 cups corn meal. Heat 2 1/2 cups water and 1 teaspoon salt to boiling. Mix 1 1/4 cups corn meal with 1 cup cold water. Add mixture slowly to boiling water, stirring constantly. Cook over low heat about 5 minutes, stirring constantly (makes about 3 1/2 cups).

Brown meat with onion, add other ingredients (tamale mix) and simmer 1/2 hour. Line casserole dish with cornmeal mush. Add all ingredients, dot top with remaining corn meal mush and olives. Heat at 350 degrees about 1/2 hour.
