PERFECT GRAVY
 

1/4 c. fat from meat drippings
1/2 c. all-purpose flour
4 c. liquid (meat juices, broth, water)
Salt and pepper

Pour drippings from pan into large measuring cup. Remove 1/4 cup of fat from drippings and place in saucepan. Add enough liquid to drippings to make 4 cups. Add liquid to pan.

Mix together flour and small amount of drippings or water or milk to make thin paste. Over low heat, stirring constantly, add the thin flour paste to liquid and simmer until thickened. Season to taste with salt and pepper.
