GREEN BANANA PIE
 

2.2 lbs. green bananas
3 tbsp. butter
1/4 c. chopped onions
1/4 c. chopped pimentos
2 tbsp. flour
1 c. evaporated milk
Salt and pepper to taste
1 c. shredded cheese

1. Boil bananas in their skin in salted water until soft. Slip out of skin while hot and crush to an even consistency.

2. Heat butter. Saute onions and pimentos for 2 minutes.

3. Mix flour with evaporated milk and add to vegetables. Add shredded cheese. Cook until smooth. Add salt and pepper to taste.

4. Add crushed bananas and mix thoroughly. Adjust seasoning if necessary.

5. Put into greased baking dish. Bake at 375 degrees F. for 30 minutes until golden brown. (Serves 6.)
