CUBAN BLACK BEANS
 

3 c. black beans
2 c. onion, chopped
2 c. green pepper, chopped
2 or 3 garlic cloves, minced
2 bay leaves
3 tsp. salt
3 tsp. onion powder
3/4 to 1 1/2 tsp. cumin powder
3 tbsp. lemon juice

Cook black beans in 8 cups or more of water until tender. Saute onion, pepper and garlic in 3 tablespoons of olive oil. Add to cooked beans. Add seasonings except lemon juice. Simmer 30 minutes more to blend flavors. Serve with brown rice. Garnish with chopped scallions and tomato wedges. Add lemon juice just before serving.
