BARBECUED BRISKET
 

6 lb. beef brisket
2-3 oz. liquid smoke
2 tbsp. celery
Salt or 1 tbsp. celery seed
1 tbsp. onion salt or 2 tsp. onion powder
1 tbsp. garlic salt or 2 tsp. garlic powder
Salt and pepper
Worcestershire sauce
1/2 c. water
Barbecue sauce

Place brisket in large square of heavy duty foil. Over meat sprinkle liquid smoke, celery salt, onion salt, and garlic salt. Seal foil around pan. Refrigerate overnight. Next day, remove foil and place in roasting pan. Over meat sprinkle salt, pepper, and Worcestershire sauce. Add water to pan. Cover and bake in 275 degree oven 6 hours. Remove from oven, cool then refrigerate overnight. Next day, remove from juices, slice, place in foil. Pour barbecue sauce over meat. Reheat at 300 degrees for 1 hour.
