TENDER ROUND STEAK WITH GRAVY
 

1 1/2 lbs. round steak, fat trimmed
2 tbsp. oil
1 can beef broth
1/2 c. water
1/4 c. catsup
1 tbsp. prepared mustard
1 lg. clove garlic, minced
Dash of Tabasco sauce
1/2 tsp. salt & pepper
2 lg. onions, quartered
1 sm. green pepper (1 inch)
1 1/2 c. mushrooms (1/4 inch opt.)
2 tbsp. flour
1/4 c. water

Brown beef in oil. Pour off fat. Add soup, 1/4 cup water, catsup, mustard, garlic and Tabasco sauce. Cover, simmer 1 1/2 hours. Add onions and cook 40 minutes more. Add green peppers and mushrooms, cook 20 minutes or until tender. Stir now and then, add more water if necessary. Make a paste of flour and water; add and stir until thickened. Serves 6. Cooking time is 3 hours.
