CRUSTLESS QUICHE LORRAINE
 

10 slices bacon, crisp cooked and crumbled
1 c. grated cheese
1/4 c. minced onion
6 eggs
1 (13 oz.) can evaporated milk
1/2 tsp. salt
Dash of Tabasco

Preheat oven to 350 degrees. Sprinkle cheese, bacon and onion in 10-inch pie pan. Beat remaining ingredients until well blended. Pour over cheese and bacon mixture. Bake for 25 minutes. Let stand about 10 minutes before cutting. Serves 6 for lunch or brunch. Since this is crustless, it saves a few calories.
