Wrap a beef brisket in aluminum foil and bake for 6 or 7 hours at 250 degrees. About 30 minutes before done, spread with barbeque sauce and a little salt. Bake 30 minutes longer. Cool 1/2 hour or more until well set. Then slice very thin and serve with sauce. BARBEQUE SAUCE: 2 tbsp. butter 1 med. onion, chopped 1/2 c. water 1/2 c. catsup 1/4 c. cider vinegar 2 tbsp. fresh lemon juice 2 tbsp. brown sugar 2 tbsp. Worcestershire sauce 1 tbsp. molasses 2 tsp. salt 2 tsp. dry mustard 1/2 tsp. ground pepper 1/2 tsp. paprika Melt butter in large skillet over medium low heat. Add onion. Cover and cook until translucent - 10 minutes, stirring occasionally. Blend in remaining ingredients. Bring sauce to boil and simmer 30 minutes. When serving put this in a small pitcher and serve with the meat. |
