HOPPIN' JOHN
 

1 lb. salt pork, rind removed, cut into 2x1/2" strips
2 qt. water
2 onions, chopped
1 lb. black eyed peas
1 c. rice

Place salt pork in heavy pot and add 2 quarts of water. Bring water to a boil and keep at rolling boil for 5 minutes. Drain salt pork strips with a slotted spoon and reserve the liquid. Fry pork strips in heavy skillet with onions and add to the liquid. Then add the black eyed peas and rice. Simmer 35-40 minutes, or until done. Salt and pepper to taste and add water as needed.

In the South it is believed that if Hoppin' John is eaten on New Year's Day you will have good luck all year.
