POLENTA
 

6 1/2 c. water
1 tsp. salt
2 c. polenta
1/4 lb. (4 oz.) butter
1/2 c. freshly grated Parmesan cheese

Bring 5 1/2 cups of water to boil, add salt. Reduce to simmer and slowly. Add polenta, stirring constantly with a wooden spoon. Cook 20 to 25 minutes or until stiff and firm. Polenta will start coming away from sides of pan. Remove from heat and stir in butter and Parmesan cheese. Serve immediately.

Hint: Make first cup cold water, mix, then add remaining boiling water for extra smooth consistency.

Extra little extras: Top with Mariner Sauce. Top with chunks of Italian sweet sausage with peppers and onions. Or just about any mixed topping you like.
