2 lbs. gator meat 1/4 c. cooking oil 1 chopped onion, fine 1 bell pepper, chopped fine 1/4 c. parsley, chopped fine 1/2 c. celery, chopped fine 1/4 c. shallots, chopped fine Bay leaf 1/4 tsp. basil Salt & pepper Saute onions in oil until golden brown, add bell pepper and celery. Saute until tender, add meat and seasonings, simmer for 40 minutes. then add parsley and shallots about 5 minutes before serving. |
