1 lg. duckling
1/4 c. olive oil
1/4 c. butter
Basic seasoned flour
2 tbsp. wine vinegar
2 tsp. sugar
Strips from peel from 1 orange & 1 lemon
Juice of 1 orange
Juice of 1/2 lemon
1 tsp. Curacao
1 tsp. brandy
Heat oil and butter in a large frying pan. Dredge duckling with seasoned flour. In frying pan over medium high heat, brown on all sides. Place in a heavy baking dish. Pour pan drippings over duckling; cover. Place in a preheated oven about 1 1/2 hours or until duckling is tender. Remove duckling from baking dish, place on heated platter. Keep warm. Pour off excess fat from casserole.
Place vinegar and sugar in small saucepan. Cook over low heat until sugar is dissolved. Stir in drippings, orange and lemon strips, and juices; cook over medium heat until liquid is reduced by half. Add Curacao and brandy; pour over duckling. Yield: about 4 servings.
