EASY ROAST, VEGETABLES AND GRAVY
 

5-6 lb. chuck roast
2 pkgs. brown onion or mushroom gravy mix (or sprinkle with salt, pepper and 4 tbsp. flour)
6 potatoes, cut in quarters
8 carrots, sliced
4 stalks celery, sliced

Sprinkle meat with gravy mix. Wrap in heavy aluminum foil leaving enough space for vegetables. Place in baking pan. Bake in 350 degree oven for 2 hours.

Open foil. Arrange vegetables around meat and rewrap foil. Bake 35 minutes longer. Remove vegetables to platter. Your gravy is made and your meat and vegetables are cooked to perfection. (If you start with frozen roast add 30 minutes to cooking time.)
