1/2 lb. monkfish
Sugar peas
Onion (pref. Walla Walla Sweet)
Peppers - green, red &/or yellow
Carrots
butter
Fresh lemon juice
Jar plum sauce
Purchase amounts of vegetables to feed number of people dining. Slice all vegetables to stir-fry.
Melt butter (or butter) in stir fry pan. Stir fry all vegetables until crisp, add lemon juice over vegetables, set aside, keeping them hot. Cut monk fish into strips and also saute in butter and lemon juice. Heat tortillas. Add vegetables to monkfish, toss and you are ready. Place mixture in tortillas with plum sauce and roll tortilla.
