1 sm. onion 2 tbsp. olive oil 1 tsp. chopped parsley 1 tbsp. tomato paste 1/2 tsp. salt 1/2 tsp. pepper 1 pkg. frozen peas or 2 lb. fresh shelled 3 lb. porgy, cut into 2 inch slices Brown onions in olive oil. Add parsley, tomatoes sauce, salt, pepper, peas, and enough water to cover peas. Cook gently 15 minutes or until peas are almost done. Add fish and cook slowly 15 minutes longer. Serves 4. |
