SHISKABOBS
 

2 lbs. pork tenderloin
1/2 c. salad oil
1/2 c. white vinegar
1/4 c. minced onion
1/4 tsp. garlic powder
1 tsp. salt
Green peppers, onions, cut in chunks
Mushrooms and cherry tomatoes
1/4 tsp. pepper
1/2 tsp. dry mustard
1/2 tsp. paprika
1/2 tsp. oregano
1/2 tsp. thyme
1 tsp. curry powder

Cut meat into 1 to 2 inch cubes. Combine the remaining ingredients and pour over the meat. Marinate the meat from 2 hours to overnight, turning occasionally. Alternate on skewers meat, green peppers, mushrooms, and onions. Broil or barbecue until done, brushing with remaining marinate. 5-6 minutes each side for medium; 7-8 minutes for well done. Top with tomato a few minutes before meat is cooked. Serves 6. Serve with rice.
