HOG MAW
 

1 hog maw
8 to 10 potatoes, cubed
1 1/2 lb. sausage meat
Salt and pepper, to taste
Onion and parsley, as desired

Mix potatoes, sausage meat, salt, pepper, onion and parsley together and stuff in hog maw. Sew shut and place in roasting pan. Add 2 cups water. Bake at 400 degrees for 30 minutes; then turn oven to 300 degrees and bake 3 hours. Remove hog maw and pour off grease. Add water to browned pan and make gravy. Serve with cole slaw.
