EASY QUICHE
 

1 (8 inch) pie crust (buy already made, frozen)
4 to 6 strips bacon (may substitute with Spam or ham cubes)
1/2 c. finely chopped green onions
1 c. cubed Swiss cheese (Gruyere or Emmentaler)
1/4 c. grated Parmesan cheese
3 eggs - lightly beaten
1 1/2 c. Half & Half
1/4 tsp. nutmeg
1/2 tsp. nutmeg
1/2 tsp. salt (optional)
1/4 tsp. ground white pepper

Cook bacon until crisp. Pour off fat (save 1/2 tablespoon). Set bacon aside.

Saute green onions in 1/2 tablespoons bacon fat until tender.

Crumble bacon and sprinkle over bottom of pie shell.

Sprinkle onions and cheese over bacon.

Combine eggs, cream, nutmeg, salt and pepper. Strain over cheese mixture.

Bake quiche 15 minutes at 450 degrees.

Reduce oven temperature to 350 degrees and bake until a knife inserted 1 inch from pastry edge comes out clean (approximately 30 to 40 minutes).

Yield: 6 to 8 servings.

Suggestion: Serve as a main dish with salad and French bread.
