1/4 c. butter
1/4 c. creamy peanut butter
2 tbsp. brown sugar replacement
1 tbsp. granulated sugar replacement
1 egg
1/4 c. water
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
Cream together butter, peanut butter and sugar replacements. Add egg, water and vanilla beating until fluffy. Combine flour, baking soda and baking powder in sifter and sift dry ingredients into creamed mixture. Stir to blend completely.
Chill at least 2 hours or overnight. Drop by teaspoon onto lightly greased cookie sheets, 2 to 3 inches apart. Press flat with a floured glass or fork tines. Bake at 375 degrees for 12 to 15 minutes. Yield: 42 cookies.
