CRUSTY FISH AND YOGURT - DILL SAUCE
 

1 c. plain yogurt
1/2 tsp. dill weed
1/2 tsp. Dijon mustard
1/2 c. chopped green pepper
1/2 c. thinly sliced green onions (including tops)
1 egg
1 tbsp. milk
1/2 c. bread crumbs
2 tbsp. Parmesan cheese
1 1/2 lb. fish fillets, about 1 inch thick (orange roughy, cod, snapper, or bass)

Combine yogurt, dill, mustard, green pepper and onion; stir well and set aside. Beat egg and milk until blended. Combine bread crumbs and cheese. Cut fish into serving size portions. Dip fish first into egg mixture, then into bread mixture coating well on all sides.

Place in buttered baking dish. Put into a preheated 500 degree oven. Bake uncovered until fish is golden brown and opaque in center when tested, about 10 minutes. Serve with yogurt sauce. 6 servings.
