4 c. chopped green & yellow peppers 1/2 c. chopped onion 2 garlic cloves, minced 16 oz. ground turkey 1 c. tomato sauce 1/2 c. med. picante sauce or salsa 1/4 c. dark raisins 2 tsp. dried coriander 2 tsp. chili powder 1/4 tsp. each ground cloves, cumin & oregano Fresh coriander to garnish (optional) In 3 quart covered microwave casserole combine peppers, onion and garlic. Cover and cook on high 3 minutes. Crumble in turkey; stir to combine. Cover and cook on high 6 minutes, stirring 2 to 3 times, until meat is firm. Add remaining ingredients, except garnish; mix well. Cook on high 2 minutes, stirring once. Makes 4 servings. If desired, garnish with fresh coriander. Note: For milder flavor, reduce amount of chili powder or use mild picante sauce. |
