DIABETIC CUPCAKES
 

3 c. flour
1 tsp. cinnamon
1 tsp. salt
1 can crushed pineapple, undrained
1 1/2 tsp. vanilla
3 eggs
2 c. diced bananas (about 2 lg. ones)
1 tsp. baking soda
4 tsp. Sweet and Low
1 1/2 c. cooking oil

Put all ingredients in bowl. Blend do not beat. Bake at 350 degrees for 40 minutes for cupcakes; tube pan - for cake 80 minutes.
