POACHED SALMON WITH CUCUMBER YOGURT
SAUCE
 

1 bay leaf
8 coriander seeds
8 whole black peppercorns
1/2 sliced lemons
1 sm. onion, sliced
4 salmon steaks
1 c. low or nonfat yogurt
1 med. cucumber, seeded and chopped
2 green onions, chopped
1 tsp. lemon pepper seasoning

Place first five ingredients in a large skillet with 2 quarts of water. Bring to a boil, simmer 2 minutes. Add salmon; gently simmer 10 minutes or until fish flakes easily. Remove from poaching liquid; place on warm plate.

Combine all sauce ingredients. Serve a dollop or more on each salmon steak.
