1 1/2 c. whole wheat flour 1 1/2 c. unbleached flour 1/2 c. brown sugar 2 1/2 tsp. baking soda 1 tbsp. cinnamon 2 c. shredded carrots 1 c. crushed pineapple, undrained (juice) 1 c. honey 1/2 c. saffron oil 4 egg white 1 tbsp. vanilla 1/3 c. walnuts, optional Mix all ingredients. Beat 2 minutes on high. Pour into 9 x 13 inch pan coated with spray. Bake at 350 degrees for 40-50 minutes. Done when pick comes out clean. Cool 30 minutes. |
