PORK CACCIATORE
 

1 lb. cubed pork loin
1 med. onion, chopped
Garlic to taste
2 stalks celery, chopped
3 carrots, shredded
1/4 lb. mushrooms, sliced
1 (16 oz.) can tomatoes, crushed
1/3 c. low salt beef broth
2 tbsp. rosemary
1/4 tsp. basil
1/4 tsp. oregano

1. Spray large skillet with no stick cooking spray. Brown pork cubes. Remove and set aside.

2. Cook onion, garlic, celery and carrot until onions are soft, about 5 minutes, stirring occasionally.

3. Add pork and remaining ingredients; stir well.

4. Cover and simmer 10-15 minutes. Yield 4 servings. Calories 275.
