EASTER BASKET CAKE

Cake mix, any flavor
Prepared frosting, vanilla
12 oz. M & M's
2 c. flaked coconut
Aluminum foil, 16 x 8 inches
Ribbon
Tape
Green food coloring
Colored candy Easter eggs

CAKE:

Following package directions, mix cake batter and bake in 2 (8 or 9 inch) round pans. Cool completely. Using 1 layer, cut a circle in the center of the cake, leaving a ring 1 1/2 inches wide. Remove the center.

FROSTING:

Place the uncut cake layer on a plate. Frost the top. Place the ring from the other layer on the frosted layer. Frost the sides and top of the cake.

GRASS:

To tint coconut, mix 2 drops of green food coloring with 1/2 teaspoon of water in a medium bowl. Add coconut and mix with a fork until the coconut is uniformly colored.

DECORATION:

Using M & M's, decorate the basket sides and top. Place coconut "grass" in the center of the basket. Fill the basket with colored candy eggs.

HANDLE:

Fold the aluminum foil in half lengthwise and continue folding in half lengthwise 3 more times. The final size should be 16 x 1/2 inches. Wrap ribbon around the foil, securing ends with tape. Insert ends into the cake top, bending to form a handle. Decorate with a bow.
