2-3 lbs. fresh green beans 1/2 lb. bacon, diced 1 med. onion, diced 2-3 potatoes, diced 1 lg. (32 oz.) can chicken broth Enough water to keep liquid enough for cooking 1 tbsp. butter Salt and pepper to taste Saute bacon and onion in butter until bacon is just beginning to brown - not crisp. Add green beans and stir well for 3-4 minutes. Add chicken broth and enough water to cover green beans. Simmer gently until green beans begin to feel tender. Add potatoes and salt and pepper. Stir gently several times, keep enough liquid in pot to cook potatoes. Stop cooking when potatoes are tender. Check seasonings. This is good served with sliced tomatoes and corn on the cob. |
