PICKLED GREEN OR YELLOW BEANS
 

2 lbs. fresh beans
1 3/4 c. white vinegar
1 1/2 c. water
4 tsp. salt
3/4 c. sugar
1 tbsp. mustard seed
1 tbsp. whole black pepper
1 (3 inch) cinnamon stick
2 cloves garlic, split
3 med. onions (sliced or chopped)

Wash, trim and cut beans into 2 inch diagonal pieces. Cook covered in boiling salted water until tender. Drain. Combine vinegar and next 3 ingredients. Add garlic and spices tied in cheesecloth bag. Heat to boiling. Add onions and beans to vinegar solution. Bring to boil. Simmer 15 minutes. Remove spice bag. Continue simmering while packing in jars. Make sure solution covers jars 1/2 inch from top. Put in a hot bath for 5 minutes. Yields 3 pints.
