PEACHES (COOKIES)
 

Nice for weddings, showers, etc., decorative on cookie tray.

DOUGH:

4 eggs
1/2 c. Crisco oil
Drop of yellow paste coloring
1 c. sugar
1 1/2 tsp. peach flavoring
3 1/2 c. flour
1 1/2 tsp. baking powder

FILLING:

Crumbs from centers of cookies
1 jar Smuckers peach butter or apricot butter
Ground nuts

Mix first 5 ingredients, then add flour and baking powder. Form dough into walnut size balls. Place on cookie sheet lined with silicone paper or foil. Bake at 350 degrees until edges are slightly browned. Cool on rack. Scoop centers out of flat side with spoon or small knife. Reserve crumbs. Fill cookies with filling and put 2 cookies together to form complete peach. Dip in 1 egg white, slightly beaten. Sprinkle a little red sugar on top of cookies for a blush. Then roll cookie in a mixture of 1 cup yellow sugar and 1 small box of peach Jello (dry). Dry cookie on rack and add a small plastic peach stem while still moist.

You may use just a good butter frosting in middle of cookies instead of Peach Butter.
