3/4 c. flour
1 tsp. baking powder
1/2 tsp. salt
3 tbsp. butter
3 1/4 oz. dry vanilla pudding mix - not instant
1 med. egg
1/2 c. milk
1 (15-20 oz.) sliced peaches or 1 (15-20 oz.) pineapple chunks, well drained
3 tbsp. juice from peaches or pineapples
1 (8 oz.) cream cheese, softened
1/2 c. sugar
1 tbsp. sugar
1/2 tsp. cinnamon
Combine flour, powder, salt, butter, pudding mix, egg, and milk. Beat 2 minutes at medium speed. Pour into greased 9 inch pie pan.
Place over batter sliced peaches or pineapple chunks (WELL DRAINED) and reserve juice.
Combine cream cheese, 1/2 cup sugar and 3 tablespoons juice and beat 2 minutes at medium speed. Spoon to within 1 inch of edge of batter.
Combine 1 tablespoons and 1/2 teaspoon cinnamon and sprinkle over cream cheese filling.
Bake at 350 degrees for 30-35 minutes or until crust is golden brown.
Chill before serving. Serves 8.
