HAM 'N SWISS CHEESE BROCCOLI QUICHE
 

1 (9 inch) pie crust
1 tsp. flour

FILLING:

1 c. half & half cream or milk
4 eggs, slightly beaten
1/4 to 1/2 tsp. dry mustard
1/4 tsp. pepper
1 c. ham, cooked and cubed
6 oz. (1 1/2 c.) shredded Swiss cheese or Cheddar cheese
1 c. fresh broccoli flowerettes, blanched and well drained
1 tbsp. chopped onion

Heat oven to 350 degrees. Spread the flour around bottom of pie crust. In medium sized bowl, combine half & half, eggs, mustard, and pepper; set aside. Layer ham, cheese, onion, and broccoli in pie crust-lined pan. Pour egg mixture over top. Bake 40 to 50 minutes or until knife inserted in center comes out clean. Cool 5 minutes; cut into wedges. Garnish as desired. Refrigerate any remaining quiche. Makes 6 to 8 servings.

Frozen cut broccoli, thawed and well drained, can be substituted for the fresh broccoli.
