SMOKEY ITALIAN MARINARA

1 pkg. (12 oz.) Oberto Honey cured sausage
1 lg. onion, chopped
1 lg. green pepper, diced
2 to 3 garlic cloves, minced
8 oz. sliced mushrooms, drained or fresh
28 oz. crushed tomatoes with puree
2 tsp. Italian seasoning blend herbs

Slice sausage diagonally. Saute with onion, pepper, garlic and fresh mushrooms. When vegetables are soft, stir in remaining ingredients (add canned mushrooms at this time) and heat until bubbly. Reduce heat to simmer, cover and cook 30 to 40 minutes to develop a great smokey Italian flavor. Serve hot with your favorite pasta linguini, spaghetti, or fettucini. Makes 4 to 6 servings.
