2 lb. beef or round steak Vegetable oil for cooking 1 green pepper, diced 1 c. onion, diced 1 c. celery, diced 8 tbsp. soy sauce 2 cans Chinese vegetables, drained 1 can bean sprouts, drained 1 can water chestnuts, drained 1 can mushrooms 2 c. water 6 tbsp. cornstarch in 1 c. water, mixed Cut steak into slivers. Brown in small amount of vegetable oil. Add green pepper, onion, celery, soy sauce and 2 cups water. Simmer until vegetables are clear. Add Chinese vegetables, bean sprouts, water chestnuts, mushrooms. Add 2 more cups water. Finish cooking. Salt and pepper to taste. Add more water if desired. Thicken corn starch with 1 cup water to thickness wanted. Serve with hot cooked rice. Serves 6-8. |
