1 Duncan Hines yellow cake mix
3 eggs
1 1/3 c. water
1/3 c. oil

2 lbs. part skim Ricotta cheese
4 eggs
2 tsp. vanilla
1 c. sugar

Preheat oven to 350 degrees. Grease and flour large glass pan.

Mix Duncan Hines mix as per directions and pour into pan. Mix second part of ingredients together. Pour and spread second part of cheese mix evenly on top of cake mix. Bake at 350 degrees for 1 hour.

Cool and refrigerate. Optional: Sprinkle with powdered sugar or use fresh strawberries. Serves up to 16.
