CHINESE MAIFUN SALAD
 

Deep fry 2 1/2 ounces of maifun rice sticks in hot oil until puffed. Take out immediately and drain on a paper towel.

Combine the following dressing ingredients: Shake of dry mustard 2 tbsp. sugar 1/4 c. salad oil 1 tbsp. sesame oil (not sesame salad oil - this is a flavoring oil sold in the oriental section of your grocery - no substitution) 1/4 tsp. pepper 1/2 tsp. salt

Combine the following salad ingredients: 2 c. salad greens (spinach, lettuce, etc.) Cucumber slices 1/2 c. oriental mushrooms (reconstitute dried mushrooms in warm water, squeeze dry and slice, no substitute) 3 tbsp. toasted sesame seeds 1/2 c. shredded green onions 1/2 c. toasted slivered almonds

Toss maifun, dressing, and salad just before serving. Serve immediately!
