FIRE ENGINE (BAHAMIAN DISH)
 

6 oz can tomato paste
1 1/2 tsp dried thyme
1 can corned beef
1 tbsp vegetable or olive oil
1/4 cup chopped onion
water
cooked grits or rice

Pour vegetable oil into a pan along with chopped onions. Cook over medium heat until onion is soft. Stir in the can of tomato paste until onions and paste are combined. Add the corned beef and stir to break up the meat with the paste/onion mix. Add the dried thyme and cook until heated through. The consistency should be slightly thick. Add water if necessary to thin it out.

Serve over cooked grits or rice. Enjoy!
