SALMON CAKES
 

1 12-16 oz can Salmon
1/3 c. buttermilk
1/4 tsp. baking soda
1/4 c. self rising cornmeal
1/4 c. flour
2 eggs
1 onion, chopped
1/4 tsp. black pepper
Approx. 1 c. oil, for frying

Beat eggs, add salmon and other ingredients. Toss slightly with fork, put into cakes. Fry in oil. Drain on paper towel.
