CRISPY FISH STICKS
 

3 (1 oz.) slices French bread, cubed
3 tbsp. reduced calorie mayonnaise
2 tsp. water
1 tsp. lemon juice
1/2 tsp. grated lemon rind
1 1/2 lb. grouper or other firm white fish fillets, cut into 1 in. wide
strips or chunks (I use cod or haddock)
Vegetable cooking spray

Position knife blade in food processor bowl. Add bread cubes. Process 30 seconds or until crumbs are fine. Sprinkle crumbs on an ungreased baking sheet, bake at 350 degrees for 15 minutes or until browned. Place in shallow bowl and set aside.

Combine mayonnaise, water, juice and rind in a shallow bowl; stir well. Dip fish in mayonnaise mixture and dredge in bread crumbs. Place fish on baking sheet coated with cooking spray. Bake at 425 degrees for 25 minutes or until outside is crispy and browned. Serve with chili sauce or tartar sauce.
