1 can tuna, drained 1 c. cottage cheese 2 hard-cooked eggs, chopped 1 lg. tomato, chopped 1/4 c. chopped celery 2 green onions, sliced 1/2 c. shredded cheddar cheese 1/3 c. mayonnaise 1 tsp. lemon pepper marinade 1/4 tsp. salt Fresh alfalfa sprouts 16 slices whole grain bread, toasted & buttered In bowl mix tuna, cottage cheese, eggs, tomato, celery, onions, and cheddar cheese. In another bowl mix mayonnaise, pepper, salt then fold into tuna mixture. Spread 1/3 to 1/2 cup tuna mix on half the toast. Top with sprouts and another slice of toast. Makes 8 sandwiches. Also good for stuffing large tomatoes or as a spread on crackers. |
