3 c. water 1 tsp. salt 6 peppercorns 1 sprig parsley Cucumber slices (optional) 1/2 c. white wine 1 bay leaf Dash of thyme, crushed 1 1/2 lb. halibut steaks Creamy cucumber dill sauce Combine water, wine, salt, bay leaf, peppercorns, thyme and parsley; bring to a boil and add halibut. Reduce heat and cover and simmer 10 minutes per inch of thickness measured at it's thickest part or until halibut flakes easily when tested with a fork. Gently remove halibut and drain. Serve hot or chilled. Garnish with cucumber slices. Serve with creamy cucumber sauce. |
