ITALIAN CODFISH
 

1 lb. codfish fillets
1 8 oz. can Italian stewed tomatoes
1/2 green pepper
1/2 yellow onion
mild olive oil
paprika

Thinly slice onion. Chop green onion into small cubes; place onion slices into a a shallow, square casserole dish.

Place pepper cubes on top of onion slices. Drizzle a small amount of olive oil over onion and peppers.

Place in a preheated over at 350°F for about 4 minutes or until softened.

Remove from oven and place fish fillets over the top of onions and peppers. Drizzle more olive oil over fish.

Chop the stewed tomatoes into small pieces and pour tomatoes with sauce over fish. Put a shake of paprika over entire dish.

Return to 350°F oven for 10 minutes or until fish is flaky.

Serve hot.
