GOLDEN PANFRIED FISH
 

chic pea flour
4 tablespoons canola oil
1/2 lb (about 280 grams) fish, filleted and boned
salt (rock salt)
1/3 cup white wine

Place fish on chopping board and lightly sprinkle with rock salt. Place chic pea flour (gluten free option) in n a flat tray. Dredge fish in chic pea flour, dusting both sides to evenly cover the whole fish.

Place a nonstick fry pan on medium heat. Pour oil into pan and increase the heat until movement can be seen in the oil. Place fish "nice side up" in the hot pan. Slide fish into pan (away from body). Turn once when floured sides are curling up and becoming a golden color. Continue to cook until nicely seared and golden on both sides of the fish.

Add white wine slowly to pan to deglaze.

Place in a an oven heated to a very hot frying pan for about 10 minutes. Check by pushing flesh; when firm, fish is done. Season to taste and serve.
