CRUSTLESS EGG CUSTARD
 

4 lg. eggs
1/4 tsp. salt
1 tsp. vanilla flavoring
1 c. evaporated milk
3/4 c. sugar
1 c. water
Nutmeg

Combine eggs, sugar, salt and flavoring (except nutmeg). Mix well. Pour milk and water in small saucepan. Scald - do not boil. Slowly pour hot mixture in first mixture. Mix all well.

Pour into well greased pie plate sprinkled with a small amount of flour. Sprinkle nutmeg on top of custard. Bake at 350 degrees for 30-40 minutes. Remove from oven when firm. Cool. If using Pyrex reduce heat about 15 degrees before pie is done.
