3 c. all-purpose flour, minus 3 tbsp. 2 c. sugar 2 tsp. baking soda 1 tsp. salt 1/2 c. cocoa 2 c. cold coffee 1 c. cooking oil 2 tbsp. vinegar 1 tbsp. vanilla Grease and flour a 9 x 13 inch pan. Heat oven to 350 degrees. Sift together: Flour, sugar, soda, salt, and cocoa. Add: Coffee, oil, vinegar, and vanilla to mixing bowl and beat until smooth. Bake 40 minutes or until toothpick comes out clean. As soon as it comes out, Ice. ICING: 1/3 c. soft butter 3 c. softened confectioners' sugar 3 (1 oz.) sqs. unsweetened chocolate, melted 3 tbsp. whipping cream or evaporated milk 1 1/2 tsp. vanilla Mix butter and sugar until smooth. Stir in chocolate, cream, and vanilla. Makes enough for 2 (8 or 9 inch) layers or 1 (9 x 13 inch) cake. |
