EGGNOG LOG COOKIES
 

1 c. soft butter
2 tsp. vanilla extract
2 tsp. rum extract
3/4 c. sugar
1 egg
3 c. sifted flour
1 tsp. nutmeg
1/4 tsp. salt

Cream butter with flavorings. Gradually beat in sugar. Blend in egg, sift flour with nutmeg and salt. Add to butter mixture and mix well. Shape pieces of dough on sugared board into a long roll 1/2 inch in diameter. Cut in 3 inch length put on buttered cookie sheets.

Bake in 350 degree oven for 12-15 minutes. Cool and spread frosting on top and sides. Mark with fork to resemble bark on logs. Sprinkle with nutmeg. Makes about 72 cookies.

FROSTING:

Cream 1/3 cup butter with 1 teaspoon vanilla and 2 teaspoons rum extract. Blend in 2 cups sifted confectioners' sugar and 2 tablespoons light cream. Beat until smooth and creamy.
