1 lg. onion, diced 2 cloves garlic, minced 1 can tomato paste 2 lg. cans tomato sauce 1 c. water 1/3 c. sugar Salt and pepper to taste Cook onion in a small amount of olive oil until onion is golden but not brown. Add garlic and saute 3 minutes longer. Add the tomato paste, tomato sauce, water, sugar, and spices; bring to a simmer very slow until the sauce is thick and a deep red. Serve with meatballs. Makes about 2 quarts. |
