CRAB CAKES WITH DIJON SAUCE
 

First combine ingredients and mix:

4 med. eggs, lightly beaten
1/2 c. chopped parsley
1/4 tsp. white pepper
2 tsp. Maggie or soy sauce
1/4 tsp. mustard powder
2 tsp. Dijon mustard
2 tbsp. + 2 tsp. Worcestershire sauce

Second - add to mix:

5 c. fresh bread crumbs
3/4 c. mayonnaise

Last gently incorporate:

1 lb. lump crab meat

Form mixture into 12 patties, saute in clarified butter or an other type of oil until lightly brown and cooked all the way through.

LOUIE'S DIJON SAUCE:

Mix 3/4 cup each:

Dijon mustard
Sour cream
Mayonnaise

Add to mix:

1 tbsp. white wine
1/4 tsp. mustard powder
Pinch of white pepper
