SAUCE: 4 c. tomato juice 2 tsp. chili powder 1/4 tsp. allspice 1/2 tsp. celery seed 1 tsp. Worcestershire sauce 1 tsp. brown sugar PORCUPINES: 1 lb. ground beef 1/2 c. uncooked rice 1/2 c. chopped onion 1/2 c. chopped green pepper 1/2 c. chopped celery 1 beaten egg 2 tsp. prepared mustard 1 1/2 tsp. salt 1/4 tsp. pepper Combine sauce ingredients; cover and simmer for 10 minutes. Combine porcupine ingredients and form into 1 1/2-inch balls. Place porcupines in baking dish and pour sauce on top. Bake at 350 degrees for 1 hour. This meat mixture can also be used for stuffing peppers. |
