DIABETIC APPLE PIE
 

6 oz. apple juice (no sugar)
4 tbsp. flour
1 tsp. cinnamon
6 c. peeled sliced apples
1 tsp. Sweet 'n Low or Sweet 10
1 pastry pie crust

Put apples in large bowl. Combine apple juice, cinnamon, and flour in 2 cups glass measuring cup. Stir well and cook in microwave oven 1 minute. Stir well and cook 1 minute longer. Add Sweet 10 or Sweet 'n Low. Pour over apples. Stir to coat apples. Spoon into pastry-lined pie pan and cover with mix of 1/2 cup flour, 2 tablespoons butter, and 2 teaspoons sugar substitute. bake at 375 degrees for 45-50 minutes. Serve with Cool Whip or ice cream on top.
