BISQUICK SHERBET SHORTCAKES
 

2 1/3 c. Bisquick baking mix
1/2 c. milk
3 tbsp. sugar
3 tbsp. butter, melted
Sherbet
3 c. mixed fresh fruit or 2 pkgs. quick-thaw mixed fruit, thawed

Heat oven to 425 degrees. Mix baking mix, milk, sugar, and butter until soft dough forms. Spread in ungreased square pan, 8 x 8 x 2 inches. Bake until golden brown, 15 to 20 minutes. Cool. Cut into 6 equal pieces. Split shortcakes; spoon sherbet between each. Top with fruit. Garnish with whipped cream if desired. 6 servings.
